How to Prepare: Makes about 7 servings (18-24 potato pancakes) 2 large eggs; 1-1/4 cup cold water; sweetened potato pancake mix 1 packet; 1/8 in hot vegetable oil. Directions: In a medium bowl, beat two eggs with a fork until blended. Add 1-1/4 cup cold water and mix well. Stir in contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. Fry: Drop tablespoons of batter into 1/8 hot vegetable oil in a large skillet and brown on both sides. Serve them plain, or with sour cream, applesauce, syrup or jam.
