Cooking Instructions: We recommend cooking dry-aged steaks a minimum of 145 degrees F. Season to taste just prior to cooking. Quickly sear both sides of the steak with high heat, either on the grill or in a very hot pan. After searing, transfer the steak to a lower heat setting until the desired doneness is reached. Use a meat thermometer to check temperature. Allow the steak to rest for 5 minutes to allow juices to redistribute. Keep refrigerated.
