Spelt buttermilk pancakes: 2 cups bob's red mill spelt flour, 2 tbsp brown sugar, 2 tsp baking powder, 3/4 tsp kosher salt, 1/4 tsp baking soda, 1 3/4 cups buttermilk 1 egg, 2 tbsp melted butter, 1 tsp vanilla extract. Preheat griddle to medium heat, about 350 degrees F. In a medium bowl, whisk together flour, sugar, baking powder, salt and baking soda; set aside. Whisk together buttermilk, egg, melted butter and vanilla extract. Add dry ingredients to wet and whisk to combine, taking care not to overmix the batter. Pour 1/4-cup portions onto hot griddle and cook until bubbles form on the surface, about 3-4 minutes, then flip and continue to cook through on the second side. Serve hot. Makes 4 servings. Store in a cool, dry place. Keeps best refrigerated or frozen after opening. Tear here to open. Best by 08 Apr 2025.
