To unlock every nuance of this precious flavor, the pinas are slow-roasted for 36 hours in traditional brick ovens. The extracted juice is then fermented and distilled twice: first, in a pot still to capture the fresh, mouthwatering agave flavors, and second, in a column still to impart an exquisitely smooth finish.
